1 egg

1 cup all-purpose flour or whole wheat flour

3/4 cup milk

1 tablespoon granulated sugar or packed brown sugar

2 tablespoon vegetable oil

3 teaspoons baking powder

1/4 teaspoon salt

  1. Crack the egg on side of the bowl, letting egg slip into bowl. Beat with the fork until the egg looks foamy. Add the flour, milk, granulated sugar, vegetable oil, baking powder and salt. Beat with the fork until the mixture is smooth. (For thinner pancakes, stir in 1 or 2 tablespoons of milk) Stir in blueberries, raspberries, or blackberries into the batter.
  2. Spray the unheated griddle or electric skillet with the cooking spray. Heat griddle over medium heat, or heat electric skillet to 375'F. (To test griddle or electric skillet, sprinkle with just a few drops of water. If bubbles jump around, the heat is just right.)
  3. For each pancake pour 1/4 cup of batter from measuring cup onto hot griddle or skillet.Cook for about 2 minutes or until pancakes are puffy and dry around the edges. Turn the pancakes over with the pancake turner. Cook for about 2 minutes or until pancakes are golden brown on bottom.
  4. Serve pancakes with butter, maple-flavored syrup, and berries if you like.


French Toast Sticks


4 slices of bread

3 eggs

1/4 cup milk

2 cups cornflakes cereal

1 tablespoon butter or margarine

Maple-flavored syrup or powdered sugar, if you like.

  1. Cut each slice of bread into 3 strips on cutting board, using serrated knife. Put bread strips in the baking dish.
  2. Crack the eggs on the side of the bowl, letting eggs slip into bowl. Add the milk to eggs. Beat with the fork until eggs look foamy. Pour over bread in baking dish. Turn bread strips over, using pancake turner, to coat other side.
  3. Put the cereal into the plastic bag. Seal bag closed. Use the rolling pin to crush cereal. Dumped crushed cereal into shallow dish or pie plate.
  4. Put the butter into the skillet. Heat over medium heat until butter is melted (be sure you coat skillet all over by tilting it).
  5. Take the bread strips out of the egg mixture, using pancake turner, and put them on the crushed cereal. Turn breads strips over with pancake turner to coat other sides.
  6. Put the cereal-coated bread strips into the hot skillet. Cook for about 4 minutes or until bottoms of bread strips are golden brown (you can check by lifting corner of strip with pancake turner and peeking). Turn bread strips over. Cook on other sides for about 4 minutes or until bottoms are golden brown.
  7. Serve with syrup or sprinkle with powdered sugar, if you like.

1/3 cup quick-cooking oats

3/4 cup apple juice or apple cider

1 pouch (3/4 ounce) fruit snack shapes

Pot holders

  1. Put the oats and apple juice in the mug. Stir with the spoon until mixed.
  2. Microwave the mug on high for 1 minute. Use the pot holders to take mug out of microwave. Stir with spoon and return to microwave. Microwave 30 seconds to 1 minute 30 seconds longer or until the oatmeal and apple juice are thick when stirred. Use pot holders to take mug out of microwave.
  3. Add the fruit snacks to oatmeal. Stir with spoon until oatmeal is mixed. Cool 1 minute before eating.
